We had a wonderful tour of Avignonesi Vineyard, one of the best Tuscan vineyards and producers.
Particularly interesting was their dessert wine production process – these wines take around 12 years to be ready for consumption, during which time (unlike most other wines), they are aged and stored in normal environmental conditions – exposed to fluctuating temperature, light and humidity levels. This means that after bottling and purchase these wines can continue to be stored in ‘normal’ conditions, without any loss of quality.
To encourage the sweet flavour of the dessert wines the grapes are allowed to dry out – hence to produce one bottle of dessert wine requires the same quantity of grapes as it takes to produce around 60 bottles of Avignonesi’s other wine varieties.
